The Chef

Guy began his career in New Zealand 16 years ago and has since honed his craft in world class kitchens all over the globe.

Working alongside esteemed chefs in Copenhagen, France and Italy, and as a private chef throughout Europe, he was inspired by the markets and produce in each location; always acquiring knowledge throughout his extensive travels – such as sharpening his sashimi skills in Japan, or mastering the art of pasta in Italy.

Back home, he brings his experience and enthusiasm to the table at PAX. His elegant and imaginative menus use local produce to create dishes that are simple and refined with Mediterranean and Japanese influences.
